2008 vw jetta oil warning light

The oil light flashed red and beeped while driving. Oil level is good, oil is new,
engine sounds good. Next time I drove it light does not come on at all. Could
this just be a bad sensor?

Not sure about all the crap that VW puts on their cars, but it's likely the oil level sensor or oil pressure sensor. Or it might be a signal that the oil pump is having a problem or there's debris in the oil galleys. The car is fifteen years old. If the oil level is acceptable, then you should have engine oil pressure checked by a mechanic before turning the engine on again. The alternative could be a need for a new engine.
Any red lights means stop the engine or severe damage will result. You didn’t state how many miles the vehicle had but this old it could have excessive bearing clearances, so everything is fine until it warms up then oil pressure drops away, best recommendation is have your favorite shop check it out, but don’t drive it have it towed.
