Tempature Gauage

When driving down a long hill, temp gauage will
drop just a bit to cool side. Once back under
normal accelaration, gauage returns to normal.
Any ideas on what is causing this?

    i replaced the thermostat housing and thermostat along with sensors. The guage starts at hal when cold then moves upward as the vehicle gets warm. What causes that and how can I fix it?
