2004 avalanche 1500 5.3l not accelerating as it should at highway speed.

So I have an 04 avalanche and it seems to be accelerating super slow on the highway. I get that its not a sports car but it shouldn't be doing it as slow as it is. I'm at about 60 mph put pedal to the floor and rpms go from about 2k to 3k and stay at 3k and it takes foreverrr to get to 70+ mph. I have replaced my fuel pump, all spark plugs and wires, cleaned all the injectors and I've been losing my head over this. It also likes to idle low and sometimes drop below idle for no reason.
