The temperature Gauge shows usually 90 C. Is it normal?

I have an Opel Astra and The Temperature Gauge shows usually 90 C. Is it
normal? When I turn off the engine it gets higher around 95 C and the cooling
fan starts running.
When I remove the key the cooling fan stops. Should I let the engine idling,
should I leave the key in and let the electronics on or none of them?

This is normal operating temperature. It cannot hurt to leave the key in for a minute or so to cool things down.
