Cooling issue

When I start my truck up and drive it, it takes the normal
amount of time to heat up, the needle will then begin to
slowly keep heating up all the way until just before the red
zone, the check gauges light comes on and it'll sit at that
temp for 5 seconds and then the gauge will drop rapidly
back down to normal temp range. Like less than 5
seconds and it back to normal. It does not exceed normal
range again after that until I've turned the truck off for a
while and start it back up again, then it repeats the same
cycle. What could be causing this? Is it cause for
concern?
