Every time I try to accelerate my truck then come
off the gas paddle in hit the gas again my truck
sounds like it goes into a different gear in my
engine goes louder in truck goes slower

Every thing sound normal except the truck going slower. When you step on the gas, I can see the trany down shifting, which would explain the engine getting louder since it would be running at a higher RPM, But going slower? The only thing I can think of would be a plugged catalytic converter. Have an exhaust shop check it out.
