what happens if I remove the thermostat in my truck ? will the truck still over heat?

It may run hot, and throw codes since it would not be at the proper operating temperature.

Probably, because without a t-stat the coolant does not stay in radiator for enough time to cool ----- And good morning Rowefast

Not a good idea. The engine has 2 different programs that your car runs on. 1 is closed loop which uses more fuel til the computer sees that engine has reached normal operating temperature then it switches to the normal program, that's the function of the thermostat

It will be slow to warm up and may not run at the proper temp. Listen to the guys above!
