Truck starts rough, works fine driving but when I accelerate at a stop sign it'll run rough till it shifts gears. Any advice?

About a month ago my truck started getting
hot on the highway and cut off on me.
Scary experience but the thermostat ended
up being the problem (locked up on me)
ended up replacing thermostat, water pump
and radiator. I have replaced the spark
plugs and dumped a can of seafood in the
gas tank

Put seafoam not seafood (damn autocorrect)

if you ran it hot enough for it to shut off you most likely damaged the motor, possibly ruined the head gaskets
