I'm looking at a '09 F250 SD with 5.4L and 20" wheels/34.5" dia. tires, 3.73 rear end. No test drive yet, it's >200 miles away. Is this going to be too underpowered? Slow to even get on the highway?

The 5.4L is a 300HP -364 ft/lbs torque@3750 rpm. That is plenty of power. I don't know about the gear ratios vs. wheel diameter without looking it all up but that kind of HP and low-end torque is going to get you moving in a hurry.
