If u were running it without antifreeze, u may have rust build up inside preventing coolant flow. Check coolant flow in radiator to see if coolant is circulating, if not and if coolant is clean, like T_S_T said, replace water pump

Running hot= 1. Make sure all fan shroud are installed (very necessary). insure all parts around radiator are there!!! why are you using water. is your fan clutch and water pump OK, if your having to keep putting in water is it because of what's making it run hot or ie pump or leak, or because its getting hot from no coolant. 2.replace thermostat again. Do not run without one and always USE antifreeze! Never water (except in emergency). 3.Check condition of radiator; outside fins and inside (NO PAINT ON FINS). 4. Make sure hoses not kinked or restricted. 5. Check timing, vacuum advance, and if fuel may be restricted causing lean that would cause hot operation. 6. Of course you've already checked your belts and pump for leaks.
