Why does my 95 firebird stall out when gas is presses

It's either a bad fuel pressure regulator or your fuel pump is on it's way out. I would try replacing the fuel pressure regulator first. Much cheaper and easier to get at. Try Rock Auto......

Run a few tanks with injector cleaner before tearing anything apart. Cheap fix and it often solves a lot of issues.
