why does the temperature go up when I am stopped at a red light and then go down as I accelerate?

Sounds like the clutch on your fan needs replaced. With vehicle turned off grab fan blade and give it a spin. Should only turn just a little then stop. If it freely spins then it needs to be replaced.

Have you checked the fluid level in the radiator? Always check the level when the engine is cold.
