Every time I start off i hear a thumping sound, or like a thudding sound coming from under the truck, it even jerks back a forth. After i reach higher speeds it stops, also after the truck seems to heat up it start to stop or is not as loud. I was wondering if it could be the U joints

It's a possiblity and would be the first thing I would check because it is the easiest. It could also be the transmission. Or maybe a motor mount. Or maybe the ring and pinion in the rear end.

Does the thump only happen when you start the engine and put it in gear? Start the engine but leave it in park and let it idle. If there is no thump you can probably eliminate an internal engine problem. If it thumps while at idle, begin checking motor mounts and belt driven accessories.
