How to turn off the rear wheels on a  2020 Ford Escape SE AWD so it can be
towed on a car dolly.

You can't just turn them off. You would have to use a flat bed to tow your vehicle, meaning all four wheels off the ground. With only front or rear wheels on the ground while towing with a dolly, you will cause damage to the transmission and drivetrain. Check your owners manual for more info.
