07 Chevy impala engine overheating

I noticed my thermostat going up and down last
Wednesday and then my car telling me the engine was
overheating. Then I noticed my car leaking coolant/water
that I put in it, now it’s not leaking as much as it was
before, my thermostat continues to go up and then down
and then back up... do you think it could be that I need a
new water pump and thermostat?

Depending on where you are leaking from. Good way to tell without pressure testing is to park car on cardboard where you can let it sit and see if theres liquid on cardboard which side. you could be leaking from your thermostat housing unit.
