2001 Sable rough idle and stall after replacing belt. car ran about 4 miles
without belt. could this be the issue, or do I need to look somewhere else?

I assume it was the serpentine belt? Without the belt you would have no water pump, alternator or power steering. If you went ling enough to overheat you may have a leaky head gasket. If coolant is getting into one or more cylinders that would cause a rough or no idle situation
