Towing

I have a 2017 jeep Cherokee V6, the vechicles
towing capacity is 2000 lb however my hitch is
rated for 5000 lb. I want to tow a 2013 hyundai
veloster on a car dolly, the hyundai weighs 2600 lb
and the car dolly weighs 780. Would it be safe to
tow?

As long as all the weight is not on the dolly. Your still taking a risk. I would go far with a v6. Go slow.
