What should the temperature gage read on a 1994 Chevy Silverado with a 5.7 L motor

I changed water pump Thermostat and top and bottom hoses and how do I know when all the air is out of the system when I burp it, and what should my temperature gauge read when it’s running temperature because it seems like it’s running a little warmer than it did before I put the water pump and thermostat in and it’s running about 195 to 210 is that too hot 210 because it seemed like it was running cooler before I put new stuff on, And it gets a little warmer if I run the air conditioning around 210 to 215. And is it normal when it’s real hot outside to get over to tune
