I had a "Check Engine" Light with a code that indicated a thermostat problem. When we got into it, we found nothing wrong with the stat but determined it is computer controlled. Disconnected the battery while checking it and when it was reconnected, code was cleared and everything worked fine. Did you bleed the cooling system when you replaced the stat? You might have an air bubble in it. Good luck.
