Water in oil

I have a 1995 Suburban. TBI 350.I didn't
have antifreeze in it during our last
freeze.Trucks runs fine, Doesn't get hot and
shows no signs of hydro locking. The oil
level was over full I drained it and thick tan
"cake batter" cane out. I pour water into the
radiator and it immediately comes out the
oil drain plug. Never seen that or heard that
one before.I've been under a million
hoods.I've asked around, They always
scratch their heads just as I'm doing. Bought
another engine, But it's a 284,000 nice truck.
What gives?

You may have cracked the block allowing water to leak into the engine interior.

Engine with plain water and below freezing temperatures = deflated wallet. You block is cracked like F_O_R posted above.
