I am thinking of buying a 1972 gran torino with a 302 engine. Is it possible to
swap it for a 351 or higher in the future? And how hard would this be?

Yes it is possible and it should be fairly straight forward. You will devalue your car if you install a non original engine. If you want more power you should not have any problem getting 300 hp out of the 302.
