What would cause carbon buildup on valves?

Direct Injection is known to cause carbon build up. Let me guess, the dealer wants to charge you a small fortune to remove the carbon? Did they provide proof? Does your car run OK?

Low octane gas always best to fill up with the middle grade sometimes.

I agree with FOR. This is a typical practice in some dealerships and exploits the customer by charging for a chemical treatment that can be done in your driveway for about $10. What problem does the car exhibit? How many miles has it been driven? Any symptoms like hesitation or unusual noises when accelerating? Your Acadia will run fine with regular grade gas and should last far more than the 3 years you have had it.
