I am considering buying a 2015 Subaru imprezza (Sedan) with very limited
mileage - approx 3,500. The 3 year warranty has expired and I'm wondering
what issue one might face in purchasing such a vehicle.

You should look into a Subaru factory backed extended warranty. I have one and the warranty coverage is really good.
