Automatic locking of the doors when the car is put in gear and starts moving is a safety feature that keeps inattentive passengers from jumping out of the moving car. My 2004 Taurus did that until I reprogrammed it based on instructions in the owners manual. It had something top do with turning the key on and off while cycling the door locks somehow.
