Fans not Turning On

I was tracing the noises under the hood one by by.
The first noises was the stretch belt and the tension pulley. Replaced both of
those and that works great now.
The second noises was from the fans turning on immediately when the heat
or a/c was turned on even if the car was cold. I took off everything from the
front end and had to disconnect the radiator to get to the fans. Found out
that the fans were smacking on one of the bolts inside so I removed the bolt
as it didn't seem to make a difference in the stability of the fan. Reinstalled
everything.
Now the fans will not turn on. I have run the car for up to half an hour and the
temp gauge inside is not reading past halfway. I have given it gas to keep the
rpms up etc. I keep getting more air out of the radiator (which is great) but I
am not getting any action from the fans (which is bad).
What is next step? Should I replace the coolant temperature gauge?

I have replaced the coolant temperature sensor but temperature gauge still will not go past halfway and fans will not kick on. Fans will turn on if I unplug the coolant temperature gauge though.
