Have a 2013 Ford f150 5.0 have 80,000 miles on it. Check
engine light comes on when I'm accelerating fast.  Then it
shakes and all the power dies down. I changed out my
spark plugs out about 2 months ago. Was thinking if it's a
gap in one of the plugs or the wires are going bad.

Code P0301 points to miss-fire at #1 cylinder. You could move the coil and spark plug from #1 and swap them with #2 and see if the miss moves with the coil and spark plug. If the miss moves you will have a P0302 come up (if using the #2 cylinder). Then just replace the bad part. Also look at the wiring connections at the coil, fuel injector and spark plug for the #1 cylinder. #1 on your Ford is the passenger side front cylinder.
