Coolant not up to Temp.

I have a 2013 Camaro 3.6L 2LT RS. After RPM Automotive changed the
Thermostat I get a A/C off due to engine overheating warning. Coolant Temp
reads dashes "--" and no temp. Engine temperature gauge shows full cold
(Not working). Code is for Coolant Fluid not up to correct temperature. Any
ideas? Also does the temp gauge read from the coolant temp sensor or
somewhere else?
