What does CPO mean?   Also, how do I tell how long a car has been listed?

CPO is a generic term for vehicles that have undergone and passed a Manufacturer's inspection to qualify for their Certified Pre Owned status. This gives the consumer come peace of mind with respect to condition at the time of purchase. Generally speaking these are comprehensive inspections (140 - 172 items and sometimes more) and anything that does not pass must be repaired or replaced. They also (generally) provide some limited additional warranty periods. Terms and length of warranty vary by manufacturer. The dealer should be able to answer all your questions and provide you with proof of inspection and qualification.
