I have a 2012 Jeep Liberty. The wheels I have right now are p225/60r16.
What is the largest tire I can put on the car without getting a lift?

You could go up a size or two without problems but you need to measure your clearances to know for sure. Probably something like a 235 or 245/60-16 would work OK. Any good tire shop can help you check the clearance.
