Don't forget that the recent cold spell nationwide will affect how fast your engine can produce heat. Also check in the radiator and overflow bottle that the coolant level it topped up. Check that the coolant is not freezing/slushing up. The freeze point should be -35 degrees F or colder. But your are correct that the thermostat is a suspect when engines run too hot or too cold. On a vehicle this new, it would be the last thing to check.
