Engine races on my 1999 chrysler 300m at all times, what causes that?

I've changed thermostat car still overheats, cooling fans work, But motor races
continually. "HELP"!!!!

IACV Idle Air Control.... MAP.....MAF...... massive vacuum leak.... any unmetered air will cause lean running = overheating ...or faulty o2 sensors sending wrong signal to ECU among other possible culprits. Keep an eye on your cat conv. make sure it doesn't begin to glow, and get an OBD scan
