Temp is reading 210-221 triggering check engine light to change thermostat

My cars temp reading is between 210-221. Its staying at middle, and caused
my check engine light to go off. the diagnostic was to change thermostat. Which
I did with a genuine Chrysler part, but temp is still between 210-221, check
engine light is still on. In NJ I cant have the check engine light on.

I just changed it so maybe I should give it a day to run and maybe bleed itself out as the coolant that came out I captured and placed back in system. I may have air pocket issues?
