So it did this AFTER replacing radiator, water pump, and thermostat? How well was the cooling system burped of air after the work was done? New radiator cap on the radiator as well? Try burping air out again, if it happens again try using Block Tester on it and see if a blown head gasket is over-pressurizing the cooling system.

Try the bleeding instructions here: http://www.passatworld.com/forums/volkswagen-passat-b5-discussion/276832-how-bleed-cooling-system.html, there are several youtube vids you can try as well, just make sure you do this with heater on. Block Tester is a tool that checks for the presence of hydrocarbons in the coolant, those hydrocarbons are the byproduct of combustion gases and a clear sign that your head gasket is blown and allowing such gases to get into the water jacket. You can buy the setup for about $50, but a lot of auto parts stores will rent or even loan out the apparatus. Takes about 15 min to run the test. You replaced a lot of your cooling system, so hopefully it was just trapped air. Anytime you have the hoses off and emptied, they are full of air, and you have to slowly add coolant to system to give that air time to get pushed out. If you just topped off rad (or degas bottle) with coolant, the first time you run it you're going to get a geyser of coolant going everywhere.
