How does something like the sending unit quit
working? And about how much does it cost to
repair it? Is it worth it or not?

Parts wear out, it is that simple. The gas tank might need to be dropped to repair it but i doubt the cost would be more than $500 but shop around. I would recommend fixing it as running out of gas can be a lot of trouble.
