Overhearing

I have a 2011 Chevy Equinox that picked up a slight engine
noise. That same day it over hearted. I was slightly low on
coolant so I added about a quart. But it still gets hot after
driving it about 5 miles, then the guage will go back down.
After about 10 miles, I need to pull over. My heater was
blowing cold air so I put in a thermostat yesturday, but none
of the symptoms changed. Does anyone have any
thoughts?

Could be a worn out water pump. The main symptoms are overheating, constantly losing fluid out of the coolant overflow and sometimes you'll actually hear it boiling. One the gauge drops back down while diving that's a good indication the coolant level has dropped below the coolant sensor itself

I was also thinking it could be a water pump... The only thing that makes me question it is that I hear a clicking noice coming from the heater core area when I adjust my heat on cool. What would cause that?

The clicking could maybe be a blend door jamming and skipping the teeth? Smelling antifreeze obviously means theres a leak, the fact its when the heater is on points towards the heater core, lines or heater valve. If you pressurize the cooling system with a coolant pressure tester (which is easy to aquire/borrow or maybe rent AND use) you should be able to find any external leaks, sometimes it takes overnight to find leaks but that's only if the system will hold its pressure overnight
