my air condition comes on but it hard for it to come back after a turn it off

Typical of Jaguar climate control unit. There is an issue there that any good Jaguar shop with JLR software should be able to diagnose. The fix in the mean time is to set the climate control where you want it and leave it there. You can turn the fan speed up or down, and adjust the temp, just do not turn the system off.
