Our 2001 9-3 ac works then goes humid for a few minutes then cold again, when it stopped last time the car started making a strange sound then rested for about 20 minutes in store ac worked no noise

The AC system collects moister from the cabin air it is cooling down. The humidity smell, felling, is normal when you have ben using it. and restarting the vehicle. The noise is probably coming from the dryer unit in the AC system. All normal.
