I'm having a major issue with my 5.7 not sitting on the motor mounts evenly... the motor is going in straight but when I ease it down to the mounts, it's crooked and off. Any suggestions?

weird it should line back up where it goes. inless frame somehow shifted or got tweaked. you have the right motor mounts?

You do have to shift the motor around for it to sit right. Original motor, original motor mounts, it's gotta go. And you may have something in the way interfering with the motor dropping on to the motor mounts.
