why did i car loose coolant?

drove car about 3 miles, temp gauge jumped to hot. took radiator cap off,
radiator and overflow reservoir were empty, just filled them both less than a
week ago.

Clearly you have a leak. It could be a hole in the radiator or a hose. The water pump could be leaking. It could also be a leaking head gasket. If you have a lot of white exhaust smoke your head gaskets are probably to blame.
