You may have a vacuum leak in the PVC fitting, if you can't see or hear it feel around by it (as you have a 4.7, the PVC is near the back of the intake). A lot of times when you do a lot of work like changing a serpentine belt you can bump hoses and fittings and if they are old, brittle, or just heat damaged they can leak. (PS the only reason RPMs drop when in gear is from loading the engine)

Make sure you put the oil filler cap back on. Any air getting into the engine that is not being metered by the MAF sensor can do this.
