How long should it take to take out the gas tank

Couple of hours would be my guess, longer if it need to be defueled.

If your having a shop do this call around shops and ask them how many man hours they charge for. You can also locate a repair book and it may give how long to do most of these jobs. Otherwise how fast you are or how slow you are, on a lift or on you stomach/back for the job. Plan for a day of it. If tank if full have a jack around to help you. The way the internal tank is made syphoning out all fuel threw the filler neck is impossible.
