The oil pressure will not stay up on my 97 chevrolet s10 truck after replacing crank shaft, rod barring, main barring, oil pump, oil sending unit, and timing chain. What is it to do now?

How about the oil pickup tube to the bottom of the pan? Chance it mistakenly not put back?

Possibly to close to the bottom of the pan and besides, "No tube= no oil pressure". Were all tolerances checked? What kind of gauge are you using to check pressure, mechanical or electrical?
I take the oil sending unit out and oil is coming fast is that good or bad

You didn't do that while running did you? hookup a mechanical gauge and recheck it.
From what you said was replaced, you did an engine rebuild? Did you make sure the correct bearings were put in and did you tape them for the proper clearances? They may also be in backward, or incorrect. Did you do anything with the cam bearings or cam itself? They may be worn and not holding the pressure. Was the crank turned or a new one put in? Did you prime the pump before starting it to bring oil up to the top of the engine and get air out of the system? Is the gage good? Like advised above, put another gage on and make sure it works. If the gage is good, and a new oil pump is put in, take it back to the engine re-bulider. If you did it yourself, You may have to tear it down again and make sure the bearings are i correct, and proper size and correct clearances.
It was a new oil pump it was a new kit all come together
