engine idle how can it be ajusted

First try cleaning throttle body and Idle Air Control valve or mass air flow sensor depending on which one your vehicle has. Also check air filter.

My 2005 trailblazer keeps idling up to 3 while in park what would cause it to do that? Also when taking off driving it wants to jerk you real hard why does it do that...

Have you tried looking for a vacuum leak it could be because of that if not check for any possible trouble codes your vehicle may be throwing. If that is all good look at the IAC valve. Good Luck (:
