WHY DOES MY CAR DISPLAY CHECK ENGINE LIGHT WHILE ITS RUNNING LEADING TO ENGINE STOP AND A HARD START

There may be a lot of reasons for that. I don't believe someone can tell you just like this without inspecting the car. Check engine light is a no joke and I would suggest you ask for a mechanic to check the car.
