Lots of possible reasons. Overheating that fast could be due to being low on coolant or maybe a bad head gasket. When was the last time your car had a full cooling system service?

What type of driving are you doing and what is the temperature where you live? in town driving will effect you more than highway. With highway, the air is being forced into the radiator. In town where it is stop and go... well not moving or right behind another car restricts the amount of air passing through the radiator. It could be that your thermostat is sticking. That car is equipped with electric fans. One works for the A/C and the other for engine coolant. I say start by checking the coolant level and topping it off, if needed, while the car is cold. Then with the A/C and Defrost off. See if the fan comes once the temperature gets high. If it doesn't, turn the engine off and carefully touch the radiator hose to see if it is very hot. Use a cooking thermometer if you have one. If it is above 220 degrees, you have a problem with the fan of the sensor that turns it on. If its below 210 or so, it could be that your temperature sending unit for the dashboard gauge is showing high and yes, there are two temperature sending units on your car. Good Luck I have owned a 2004 Base model, 2006 LTZ, and 2008 SS. Loved my Impalas
