I already replace engine coolant sensor we
even let the air out yesterday, but today my
temperature gauge is i I already replace
engine coolant sensor we even let the air
out yesterday, but today my temperature
gauge is is about 70% hot but when I hit
the break it goes down to 50%. Do you
think I should just go to the Subaru dealer  
and buy original engine coolant sensor

No. Have motor checked for percolation of combustion gases into coolant. If yes, throw the car away as the repair is costly ($1.6k min) and rarely permanent. Sorry.
