Sounds like there’s air trapped in the system among other things. You need to find the leak. A shop can pressure test it if the source of the leak is no evident. Fix the leak, get the system totally full with all the air bled out of it and don’t continue driving it until you do or you’ll damage the engine.
My coolant leaks and the temp usually is supposed to hang around 180 but will climb as high as 270 in a matter of minutes of driving.
