IF I unplug the [brand new] Temp. Sender on my 2004 Pontiac Grand Prix...the fans run...

When I unplug the [New] Temp. Sender on 2004 Grand Prix, the Coolant fans
RUN. When I PLUG IT IN, and coolant gets to ABOVE 190f, the coolant FANS
then DON'T come on.
WHAT GIVES?
