96 Grand Prix not accelerating at times?

When driving my car it seems to not
accelerate at times, RPMs don't go
up, so I let go of the gas and give it a
second and it seems to work alright

hummmmm.change the fuel filter first...

Clean throttle body and check air filter replace fuel filter add fuel injector cleaner to gas tank.

A plugged catalytic converter also springs to mind. A muffler shop can tell you for sure. Simply have them remove it and install a piece of pipe in its place. It's not worth buying a new one for a car that old.
