1990 pontiac Grand prix SE manual swap?

I know that a 5 speed manual was a option (almost
none took) for my 1990 pontiac grand prix SE
coupe,  i have the 3 speed with overdrive.  if i
bought the exact 5 speed transmission how hard
would it be to link it up? would i be able to find trim
for the interior to make it look stock again?

If you manage to find one make sure you get every last nut and bolt that goes with it to fit it in your car. That includes all the interior stuff as well. After that it will still be a lot of work, but should pretty well be a bolt in process. The challenge is finding that donor car. See where I'm going with this? Good luck, you'll need it.
